1/2 cup Vegan Butter
1 cup Creamy Peanut Butter
1 3/4 cups Powdered Sugar
1 teaspoon Vanilla Extract
1 1/2 cups Rolled Oats
1 cup Vegan Chocolate Chips
1 tablespoon Coconut Oil
Instructions
- Step 1: Prepare Your Pan. Line an 8×8 inch square baking pan with parchment paper, leaving an overhang on two sides
- Step 2: Melt the Vegan Butter in a microwave-safe bowl or saucepan over low heat
- Step 3: Combine Wet Ingredients: Add melted vegan butter to a mixing bowl with peanut butter, powdered sugar, and vanilla extract. Mix well
- Step 4: Add the Oats: Gradually stir in the rolled oats until fully incorporated
- Step 5: Press into Pan: Transfer the mixture to the prepared pan and press down firmly and evenly
- Step 6: Prepare the Chocolate Topping: Melt vegan chocolate chips with coconut oil in a separate bowl
- Step 7: Spread the Chocolate: Pour and spread the melted chocolate over the base evenly
- Step 8: Chill: Refrigerate for at least 2-3 hours, or until the chocolate is firm
- Step 9: Cut and Serve: Use parchment paper to lift the bars out and cut into squares
Notes
Use room temperature peanut butter for easier mixing.
Sift powdered sugar to avoid lumps.
For clean cuts, warm the knife before slicing.
