¾ cup All-purpose flour
½ cup Unsweetened cocoa powder
½ teaspoon Baking powder
¼ teaspoon Salt
½ cup Unsalted butter, melted
1 cup Granulated sugar
2 Large eggs
1 teaspoon Vanilla extract
½ cup Chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a mini muffin tin or line it with mini paper liners
- In a medium bowl, whisk together the all-purpose flour, cocoa powder, baking powder, and salt
- In a large bowl, whisk melted butter and granulated sugar until smooth
- Add eggs one at a time, whisking well, then stir in vanilla extract
- Gradually add the dry mixture to the wet mixture, folding gently until just combined
- If using, fold in chocolate chips
- Spoon the batter into the mini muffin cups, filling them about two-thirds full
- Bake for 12-15 minutes until the edges look set and a toothpick inserted comes out with moist crumbs
- Cool in the tin for 5-10 minutes, then transfer to a wire rack to cool completely
Notes
For extra fudgy bites, avoid overbaking and use good quality cocoa powder.
