Ingredients

¾ cup All-purpose flour
½ cup Unsweetened cocoa powder
½ teaspoon Baking powder
¼ teaspoon Salt
½ cup Unsalted butter, melted
1 cup Granulated sugar
2 Large eggs
1 teaspoon Vanilla extract
½ cup Chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin tin or line it with mini paper liners
  2. In a medium bowl, whisk together the all-purpose flour, cocoa powder, baking powder, and salt
  3. In a large bowl, whisk melted butter and granulated sugar until smooth
  4. Add eggs one at a time, whisking well, then stir in vanilla extract
  5. Gradually add the dry mixture to the wet mixture, folding gently until just combined
  6. If using, fold in chocolate chips
  7. Spoon the batter into the mini muffin cups, filling them about two-thirds full
  8. Bake for 12-15 minutes until the edges look set and a toothpick inserted comes out with moist crumbs
  9. Cool in the tin for 5-10 minutes, then transfer to a wire rack to cool completely

Notes

For extra fudgy bites, avoid overbaking and use good quality cocoa powder.
