A quick and easy no-bake layered dessert that mimics the delicious flavors of a classic chocolate éclair.

1 box (14.4 oz) Graham Crackers
2 packages (3.4 oz each) Instant Vanilla Pudding Mix
3 cups Milk
1 package (8 oz) Cream Cheese, softened
1 cup Powdered Sugar, sifted
1 container (8 oz) Whipped Topping, thawed
1/2 cup Unsalted Butter, melted
1/2 cup Unsweetened Cocoa Powder
1/4 cup Milk (for topping)
1 teaspoon Vanilla Extract

Instructions

  1. In a large mixing bowl, combine the two packages of instant vanilla pudding mix with 3 cups of cold milk. Whisk for about 2 minutes until thickened
  2. In another bowl, beat softened cream cheese with sifted powdered sugar until smooth
  3. Gently fold the whipped topping into the cream cheese mixture, then carefully fold in the prepared pudding until combined
  4. Arrange a layer of graham crackers in a 9×13 inch baking dish
  5. Spread half of the pudding mixture over the graham crackers
  6. Add another layer of graham crackers on top
  7. Spread the remaining pudding mixture over this layer
  8. Top with another layer of graham crackers
  9. In a saucepan over medium-low heat, melt the butter and whisk in cocoa powder and 1/4 cup milk until smooth. Cook for 1-2 minutes until thickened, then stir in vanilla and powdered sugar
  10. Pour the chocolate topping over the final layer of graham crackers
  11. Cover with plastic wrap and refrigerate for at least 4-6 hours or overnight
  12. Slice into squares and serve

Notes

Use cold milk for the pudding to set properly.

Chill overnight for best results.
