2 cups All-purpose flour
1 teaspoon Baking soda
½ teaspoon Salt
½ cup Granulated sugar
¾ cup Brown sugar (packed)
2 Large eggs
2 teaspoons Vanilla extract
½ cup Extra virgin olive oil
1 ½ cups Chocolate chips or chunks
Instructions
- Preheat your oven to 375°F (190°C) and line two large baking sheets with parchment paper or silicone baking mats
- In a medium bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside
- In a large bowl, whisk together the granulated sugar and brown sugar. Add the eggs, vanilla extract, and olive oil, and whisk until smooth
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix
- Fold in the chocolate chips or chunks until evenly distributed
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart
- Bake for 9-11 minutes, until the edges are set and lightly golden but the centers are still slightly soft
- Cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely
