Instructions

  1. Preheat your oven to 375°F (190°C) and line two large baking sheets with parchment paper or silicone baking mats
  2. In a medium bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside
  3. In a large bowl, whisk together the granulated sugar and brown sugar. Add the eggs, vanilla extract, and olive oil, and whisk until smooth
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix
  5. Fold in the chocolate chips or chunks until evenly distributed
  6. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart
  7. Bake for 9-11 minutes, until the edges are set and lightly golden but the centers are still slightly soft
  8. Cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely
