2 cans (13.5 oz each) Full-Fat Coconut Milk
1/2 cup Granulated Sugar or Maple Syrup
1/4 cup Cornstarch
1/4 cup Water
1 teaspoon Vanilla Extract
1/8 teaspoon Pinch of Salt
Instructions
- Prepare the Slurry: In a small bowl, whisk together the cornstarch and 1/4 cup of cold water until smooth. Set aside
- Combine Ingredients: In a medium-sized saucepan, pour both cans of coconut milk, add the sugar and a pinch of salt
- Heat Gently: Place the saucepan over medium heat, stirring continuously until the sugar dissolves and the mixture is warm
- Thicken the Pudding: Whisk the cornstarch slurry again and gradually pour it into the warm mixture while whisking constantly
- Continue Cooking: Keep whisking for another 2-3 minutes as the mixture thickens to a pudding-like consistency
- Remove from Heat & Flavor: Take off the heat and stir in the vanilla extract and any additional flavorings
- Portion & Chill: Pour the mixture into serving dishes and cover with plastic wrap to prevent skin formatio
- Chill Thoroughly: Refrigerate for at least 3-4 hours or overnight to firm up
- Serve: Remove the wrap, garnish as desired, and enjoy
