Ingredients

2 ¼ cups All-purpose flour
1 teaspoon Baking soda
½ teaspoon Salt
1 cup Unsalted butter (softened)
¾ cup Granulated sugar
¾ cup Packed light brown sugar
2 Large eggs
2 teaspoons Vanilla extract
8 ounces Cream cheese (softened)
½ cup Powdered sugar
12 tablespoons Milk or heavy cream
45 cups Assorted fresh fruit (sliced)
2 tablespoons Apricot jam or glaze (optional)

Instructions

  1. Preheat oven to 375°F (190°C). In a medium bowl, whisk together flour, baking soda, and salt. Set aside
  2. In a large mixing bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy. Beat in eggs one at a time, followed by vanilla extract. Gradually add dry ingredients until just combined
  3. Lightly grease a 12-inch round pizza pan. Press cookie dough into an even layer on the pan. Bake for 12-15 minutes until edges are lightly golden. Allow to cool completely
  4. Prepare the frosting by beating cream cheese until smooth. Gradually add powdered sugar and beat until combined. Add milk as needed for spreadable consistency
  5. Spread frosting evenly over cooled crust. Decoratively arrange sliced fruit on top. Optionally glaze with apricot jam. Chill for at least 30 minutes before serving

You can make the cookie crust in advance and store it at room temperature.
