Ingredients
2 ¼ cups All-purpose flour
1 teaspoon Baking soda
½ teaspoon Salt
1 cup Unsalted butter (softened)
¾ cup Granulated sugar
¾ cup Packed light brown sugar
2 Large eggs
2 teaspoons Vanilla extract
8 ounces Cream cheese (softened)
½ cup Powdered sugar
1–2 tablespoons Milk or heavy cream
4–5 cups Assorted fresh fruit (sliced)
2 tablespoons Apricot jam or glaze (optional)
Instructions
- Preheat oven to 375°F (190°C). In a medium bowl, whisk together flour, baking soda, and salt. Set aside
- In a large mixing bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy. Beat in eggs one at a time, followed by vanilla extract. Gradually add dry ingredients until just combined
- Lightly grease a 12-inch round pizza pan. Press cookie dough into an even layer on the pan. Bake for 12-15 minutes until edges are lightly golden. Allow to cool completely
- Prepare the frosting by beating cream cheese until smooth. Gradually add powdered sugar and beat until combined. Add milk as needed for spreadable consistency
- Spread frosting evenly over cooled crust. Decoratively arrange sliced fruit on top. Optionally glaze with apricot jam. Chill for at least 30 minutes before serving

Use various colorful fruits for a beautiful presentation.
You can make the cookie crust in advance and store it at room temperature.
