Instructions

  1. Prepare the crepe batter by whisking flour, 1/4 cup sugar, and salt in a bowl. In another bowl, whisk eggs, milk, and 1 teaspoon vanilla. Combine wet and dry ingredients until smooth, then stir in melted butter. Refrigerate for 30 min to 2 hours
  2. Divide the crepe batter into bowls and add gel food coloring to each, stirring until uniformly colored
  3. Heat a non-stick skillet, grease lightly, and pour in 1/4 cup of batter for each crepe. Cook until edges crisp, flip, and cook until golden. Repeat for all colors, stacking crepes as cooked
  4. Prepare whipped cream by beating heavy cream, 1/4 cup sugar, 1/2 cup powdered sugar, and 1 teaspoon vanilla in a chilled bowl until stiff peaks form
  5. Assemble the cake by stacking crepes with whipped cream in between. Start with purple and alternate colors, finishing with a crepe layer on top. Chill for 2-4 hours
  6. Serve with a dusting of powdered sugar or fresh berries
