Ingredients
2 cups All-Purpose Flour
1/2 cup Granulated Sugar
1/2 teaspoon Salt
4 Large Eggs
2 cups Milk
4 tablespoons Unsalted Butter
2 teaspoons Vanilla Extract
Food Coloring Gels (Red, Orange, Yellow, Green, Blue, Purple)
3 cups Heavy Cream
1/2 cup Powdered Sugar
Instructions
- Prepare the crepe batter by whisking flour, 1/4 cup sugar, and salt in a bowl. In another bowl, whisk eggs, milk, and 1 teaspoon vanilla. Combine wet and dry ingredients until smooth, then stir in melted butter. Refrigerate for 30 min to 2 hours
- Divide the crepe batter into bowls and add gel food coloring to each, stirring until uniformly colored
- Heat a non-stick skillet, grease lightly, and pour in 1/4 cup of batter for each crepe. Cook until edges crisp, flip, and cook until golden. Repeat for all colors, stacking crepes as cooked
- Prepare whipped cream by beating heavy cream, 1/4 cup sugar, 1/2 cup powdered sugar, and 1 teaspoon vanilla in a chilled bowl until stiff peaks form
- Assemble the cake by stacking crepes with whipped cream in between. Start with purple and alternate colors, finishing with a crepe layer on top. Chill for 2-4 hours
- Serve with a dusting of powdered sugar or fresh berries

Use gel food coloring for vibrant results.
Chill crepe batter for best texture.
