Ingredients
2 cups Glutinous Rice
2 cans (13.5 oz each) Full-Fat Coconut Milk
½ cup Granulated Sugar
½ teaspoon Salt
2–3 large Fresh Ripe Mangoes
1 tablespoon Toasted Sesame Seeds (for garnish)
A few sprigs Fresh Mint Leaves (for garnish)
Instructions
- Rinse the glutinous rice under cold running water until the water runs clear, then soak it for at least 4 hours, or overnight
- Drain the soaked rice and steam it in a lined basket for 20-30 minutes until tender
- While the rice is steaming, heat one can of coconut milk, sugar, and salt in a saucepan until dissolved
- Combine the steamed rice with ¾ of the coconut sauce and let it rest to absorb the sauce
- Peel and slice the mangoes
- Serve the sticky rice topped with mango and drizzled with the remaining coconut sauce, garnished with sesame seeds and mint
Notes
Use the ripest mangoes for the best flavor.
For a lighter version, consider using light coconut milk, but the flavor will be less rich.
