Ingredients

2 cups Glutinous Rice
2 cans (13.5 oz each) Full-Fat Coconut Milk
½ cup Granulated Sugar
½ teaspoon Salt
23 large Fresh Ripe Mangoes
1 tablespoon Toasted Sesame Seeds (for garnish)
A few sprigs Fresh Mint Leaves (for garnish)

Instructions

  1. Rinse the glutinous rice under cold running water until the water runs clear, then soak it for at least 4 hours, or overnight
  2. Drain the soaked rice and steam it in a lined basket for 20-30 minutes until tender
  3. While the rice is steaming, heat one can of coconut milk, sugar, and salt in a saucepan until dissolved
  4. Combine the steamed rice with ¾ of the coconut sauce and let it rest to absorb the sauce
  5. Peel and slice the mangoes
  6. Serve the sticky rice topped with mango and drizzled with the remaining coconut sauce, garnished with sesame seeds and mint

Notes

Use the ripest mangoes for the best flavor.

For a lighter version, consider using light coconut milk, but the flavor will be less rich.
