Ingredients

1 ½ cups Graham cracker crumbs
½ cup Melted unsalted butter
¼ cup Granulated sugar
16 oz Cream cheese, softened
1 cup Confectioners’ sugar
1 ½ cups Heavy cream, cold
1 teaspoon Vanilla extract
2 cups Mixed berries (strawberries, blueberries, raspberries)
1 teaspoon Lemon zest (optional)

Instructions

  1. In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until crumbs are moistened
  2. Divide the mixture among dessert cups and press down to form the crust. Chill for at least 15 minutes
  3. Beat the cream cheese until smooth, then add confectioners' sugar and lemon zest. Mix until fully combined
  4. In a separate bowl, whip the heavy cream and vanilla until stiff peaks form
  5. Fold half of the whipped cream into the cream cheese mixture, then fold in the rest until combined
  6. Spoon or pipe the filling into the chilled crusts and top with mixed berries. Chill for 2-4 hours or overnight before serving

Notes

Use room temperature cream cheese for the best texture.
