Ingredients
1/2 cup Unsalted Butter
4 ounces Good Quality Dark Chocolate (70% cocoa or higher), chopped
2 Large Eggs
2 Large Egg Yolks
1/4 cup Granulated Sugar
1/4 cup All-Purpose Flour
Pinch Salt
2 tablespoons Unsweetened Cocoa Powder (for dusting)
Instructions
- Preheat your oven to 400°F (200°C). Generously butter four 6-ounce ramekins. Dust with cocoa powder and set aside
- Combine chopped dark chocolate and butter in a bowl and microwave until melted, stirring every 30 seconds
- In a bowl, whisk together whole eggs, egg yolks, and granulated sugar until pale and thickened
- Slowly pour the melted chocolate and butter mixture into the egg mixture and whisk until combined
- Fold in all-purpose flour and salt until just mixed
- Divide the batter evenly among the prepared ramekins, filling them about three-quarters full
- Bake for 12-14 minutes until edges are set and center is soft
- Let rest for 1-2 minutes before inverting onto a plate to serve
Notes
Do not overbake as this will turn the lava cake into a regular cake.
Serve immediately for the best molten center.
