Instructions
- Prepare the Crust: Combine the graham cracker crumbs and melted butter in a medium bowl. Mix until the crumbs are evenly moistened. Press about 2 tablespoons of the mixture into the bottom of serving glasses. Chill while preparing the filling
- Make the Cream Cheese Filling: Beat the softened cream cheese until smooth, then add powdered sugar and vanilla. Mix until well combined and light. Stir in lemon zest if using
- Whip the Heavy Cream: In a separate bowl, whip the cold heavy cream until stiff peaks form
- Combine and Layer: Gently fold the whipped cream into the cream cheese mixture until just combined
- Assemble the Parfaits: Spoon a layer of the cream cheese mixture over the crust, then add a layer of mixed berries. Repeat layers, ending with berries
- Chill Thoroughly: Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight
