Ingredients
3 cups Heavy Cream
1/2 cup Powdered Sugar
1 teaspoon Vanilla Extract
8 ounces Cream Cheese (softened)
1 can (14 ounces) Sweetened Condensed Milk
4–5 medium Fresh Peaches (sliced)
2 boxes (14.4 ounces) Graham Crackers
Optional: Fresh mint leaves, extra peach slices
Instructions
- Prepare the peaches by washing, pitting, and slicing them thinly
- In a large bowl, beat the cream cheese until light and fluffy
- Add the sweetened condensed milk to the cream cheese and mix until smooth
- In a separate, cold bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form
- Gently fold the whipped cream into the cream cheese mixture until just combined
- Layer graham crackers in a 9×13 inch dish, then spread one-third of the cream mixture and one-third of the peach slices over them
- Repeat layers until all ingredients are used, ending with cream on top
- Optional: Garnish with reserved peach slices and mint leaves
- Cover and chill the cake in the refrigerator for at least 8 hours, preferably overnight
- Once chilled, slice and serve
Notes
Make sure to use very cold heavy cream for best results.
Chilling the dish overnight allows the flavors to meld and graham crackers to soften.
