1 (15.25-ounce) box Red Velvet cake mix
1 large egg
1/2 cup (1 stick) unsalted butter, melted
1 (8-ounce) package cream cheese, softened
1 large egg
1 teaspoon vanilla extract
3 1/2 cups powdered sugar, sifted
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking pa
- In a large mixing bowl, combine the red velvet cake mix, one large egg, and melted unsalted butter. Mix until a thick, dough-like consistency forms
- Press the mixture evenly into the bottom of the prepared baking pa
- In a separate bowl, beat the softened cream cheese until smooth. Add the second egg and vanilla extract; mix until just combined
- Gradually add the sifted powdered sugar to the cream cheese mixture, mixing on low speed until smooth
- Pour the cream cheese filling over the crust and spread it evenly
- Bake in the preheated oven for 30-35 minutes until the edges are lightly golden brown and the center is set but still slightly jiggly
- Allow to cool completely in the pan on a wire rack, then slice into squares
Notes
For a gluten-free option, use a gluten-free red velvet cake mix.
You can add chocolate chips or nuts to the filling for extra flavor.
