Ingredients
2 cups Fresh Strawberries
½ cup Granulated Sugar
¼ cup Water
2 cups Heavy Cream
8 ounces Mascarpone Cheese
½ cup Powdered Sugar
1 teaspoon Vanilla Extract
2 tablespoons Matcha Powder
¼ cup Hot Water
1 package Ladyfingers
1 cup Strong Brewed Coffee
Extra strawberries for garnish
Matcha powder for garnish
Instructions
- Prepare the Strawberry Compote: In a saucepan, combine diced strawberries, ¼ cup granulated sugar, and ¼ cup water. Simmer for 5-7 minutes until the strawberries are soft. Cool completely
- Make the Matcha Concentrate: Whisk together 2 tablespoons matcha powder and ¼ cup hot water until smooth. Set aside
- Whip the Mascarpone Cream: Beat cold heavy cream until soft peaks form. Add mascarpone cheese, ½ cup powdered sugar, and vanilla extract, and beat until smooth and stiff peaks form
- Fold in the Matcha: Gently fold half of the matcha concentrate into the mascarpone mixture until combined
- Prepare the Coffee Dip: Pour cold brewed coffee into a shallow dish
- Assemble the Cups: Dip ladyfingers in coffee for a second on each side, then layer them in cups, followed by strawberry compote and matcha cream. Repeat the layers
- Chill: Cover and refrigerate for at least 4 hours or overnight
- Garnish and Serve: Before serving, garnish with extra strawberries and a dusting of matcha powder
