Ingredients
5–6 medium Ripe Bananas
1 box Vanilla Wafers (11 ounces)
3 cups Whole Milk
3/4 cup Granulated Sugar
1/4 cup All-Purpose Flour
3 Large Eggs, yolks only
2 tablespoons Unsalted Butter
2 teaspoons Vanilla Extract
1 1/2 cups Heavy Cream, chilled (for optional topping)
2 tablespoons Powdered Sugar (for optional topping)
1/2 teaspoon Vanilla Extract (for optional topping)
Instructions
- In a medium saucepan, whisk together the whole milk, granulated sugar, and all-purpose flour until smooth. Place the saucepan over medium heat. Cook, stirring constantly, until the mixture thickens and comes to a gentle boil, about 8-10 minutes
- Lightly beat the three egg yolks in a small bowl. Once the milk mixture is hot and thick, remove about 1/2 cup of the hot mixture and slowly drizzle it into the beaten egg yolks, whisking continuously
- Pour the tempered egg yolk mixture back into the saucepan with the remaining hot milk mixture. Return to medium heat. Cook for another 1-2 minutes, stirring constantly, until the pudding thickens considerably
- Remove the saucepan from the heat. Stir in the unsalted butter and vanilla extract until fully incorporated and smooth
- Transfer the hot pudding to a large bowl. Cover the surface directly with plastic wrap to prevent a skin from forming. Let it cool at room temperature for about 30 minutes, then refrigerate for at least 1-2 hours until thoroughly chilled and firm
- Choose a 9×13 inch baking dish or a large trifle bowl. Spread a thin layer of pudding on the bottom. Arrange a single layer of vanilla wafers over the pudding. Top the wafers with a layer of sliced bananas. Repeat these layers until you use all ingredients
- In a cold bowl with cold beaters, whip the heavy cream, powdered sugar, and 1/2 teaspoon vanilla extract on high speed until soft peaks form
- Spread the whipped cream over the top layer of pudding. Garnish with a few extra vanilla wafers or banana slices, if desired. Cover the dish and refrigerate for at least 4 hours, or preferably overnight
Notes
Pudding can be made ahead of time for convenience. Best results are achieved with overnight chilling.
