2 cans (13.5 oz each) Full-Fat Coconut Milk
1/2 cup Granulated Sugar
2 1/2 teaspoons Powdered Gelati
1/4 cup Cold Water
1/4 cup Fresh Lime Juice
2 tablespoons Fresh Lime Zest
1 teaspoon Vanilla Extract
1/8 teaspoon Pinch of Salt

Instructions

  1. In a small bowl, sprinkle powdered gelatin over cold water. Let it sit for 5-10 minutes until thick and jelly-like
  2. In a medium saucepan, combine full-fat coconut milk, granulated sugar, and salt. Heat over medium-low heat, stirring until sugar dissolves. Do not boil
  3. Remove from heat. Add bloomed gelatin to the warm coconut milk mixture. Stir continuously until completely dissolved; no lumps remai
  4. Stir in fresh lime juice, lime zest, and vanilla extract. Mix well to combine all the flavors
  5. Carefully pour the mixture into individual ramekins or molds
  6. Cover loosely with plastic wrap and refrigerate for at least 4-6 hours, or preferably overnight, until completely set
  7. To unmold, briefly dip the bottom of each ramekin in warm water. Run a thin knife around the edge, place a serving plate on top, and invert gently
  8. Garnish with additional fresh lime zest, slices, or toasted coconut flakes

Notes

For added flavor, consider infusing the coconut milk with kaffir lime leaves before combining.
