Ingredients
2 cans (13.5 oz each) Full-Fat Coconut Milk
1/2 cup Granulated Sugar
2 1/2 teaspoons Powdered Gelati
1/4 cup Cold Water
1/4 cup Fresh Lime Juice
2 tablespoons Fresh Lime Zest
1 teaspoon Vanilla Extract
1/8 teaspoon Pinch of Salt
Instructions
- In a small bowl, sprinkle powdered gelatin over cold water. Let it sit for 5-10 minutes until thick and jelly-like
- In a medium saucepan, combine full-fat coconut milk, granulated sugar, and salt. Heat over medium-low heat, stirring until sugar dissolves. Do not boil
- Remove from heat. Add bloomed gelatin to the warm coconut milk mixture. Stir continuously until completely dissolved; no lumps remai
- Stir in fresh lime juice, lime zest, and vanilla extract. Mix well to combine all the flavors
- Carefully pour the mixture into individual ramekins or molds
- Cover loosely with plastic wrap and refrigerate for at least 4-6 hours, or preferably overnight, until completely set
- To unmold, briefly dip the bottom of each ramekin in warm water. Run a thin knife around the edge, place a serving plate on top, and invert gently
- Garnish with additional fresh lime zest, slices, or toasted coconut flakes
Notes
For added flavor, consider infusing the coconut milk with kaffir lime leaves before combining.
