Ingredients

2 ½ cups All-Purpose Flour
1 ¾ cups Granulated Sugar
1 tbsp Baking Powder
½ tsp Salt
¾ cup Unsalted Butter (softened)
3 Large Eggs
1 cup Whole Milk
2 tsp Vanilla Extract
2 tbsp Culinary Grade Matcha Powder
1 cup White Chocolate Chips or Bar (chopped)
1 cup Unsalted Butter (softened)
4 cups Powdered Sugar (sifted)
½ cup White Chocolate (melted and cooled)
24 tbsp Heavy Cream or Milk
1 tsp Vanilla Extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans
  2. In a large bowl, whisk together the flour, sugar, baking powder, salt, and matcha powder
  3. In a separate bowl, cream the softened butter until light and fluffy, then beat in the eggs one at a time
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the milk and vanilla extract. Mix until just combined
  5. Fold in the white chocolate chips by hand
  6. Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes
  7. Allow the cakes to cool in the pans for 10-15 minutes before inverting them onto a wire rack to cool completely
  8. While the cakes cool, prepare the frosting by creaming softened butter, then gradually adding sifted powdered sugar until light and fluffy. Beat in cooled melted white chocolate and vanilla extract, adding heavy cream or milk to reach desired consistency
  9. Once the cakes are completely cool, assemble by layering the cakes with buttercream in between and covering the entire cake with the remaining buttercream

Notes

Use high-quality matcha for best results.

Ensure all ingredients are at room temperature for a smooth batter.

Allow the cake to cool completely before frosting to avoid melting the buttercream.
