Instructions
- Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper
- In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside
- In a large mixing bowl, beat the softened unsalted butter and granulated sugar together until light and fluffy
- Add the softened cream cheese into the butter and sugar mixture and beat until smooth
- Add eggs one at a time, mixing well after each addition, then stir in vanilla extract and lemon zest
- Gradually add the dry ingredients to the wet mixture and mix until just combined
- Fold in the finely diced fresh strawberries gently using a spatula
- Cover the dough and refrigerate for at least 30 minutes
- Drop rounded tablespoons of the chilled dough onto prepared baking sheets, spacing them 2 inches apart
- Bake for 10-12 minutes until the edges are golden and the centers are just set
- Cool on sheets for a few minutes before transferring to a wire rack. Dust with powdered sugar if desired
